Elijah Holland
Elijah , developed a love for food at an early age & has worked at some of Australia’s top restaurants. Branching overseas he set up two exclusive world acclaimed restaurants in China including Botanik – a rooftop restaurant in the heart of Shanghai, boasting over 115 types of edible botanicals. On his return, Elijah was head-hunted by Rene Redzepi to be Chef de Parte and part of the research & development team and head forager for Noma Australia.
At Lûmé, Elijah’s incredibly vast knowledge of Australian flora, fauna and natural ecosystems, along with his gift of creating delicious food prepared with imagination and creativity, ensure our diners enjoy an experience never to be forgotten.
